One of my favourtie recipe using urad dal is urad dal kali ( porridge ). It is a traditional south Indian sweet recipe which is prepared using urad dal flour( black urad dal), palm jaggery and gingelly oil. Usually in south India, this urad dal kali is offered to girls, women for bone strength during menstruation, pregnancy, delivery.

- Roast the urad dal in a heavy bottomed pan. Make sure the flame is low to medium.
- Don’t burn the urad dal while roasting.
- Don’t use split urad dal for preparing the flour.
- After roasting, cool down the urad dal completely. Once it is cooled down, grind them into a fine powder.
- Sieve the powdered urad dal flour to ensure small granules are removed. Spread the powder in a newspaper or kitchen towel and dry them.
